A kitchen that respects the seasons
For us, seasonality is not a trend, but the foundation of cooking.
In spring, the kitchen is filled with the aroma of young asparagus, wild herbs, and the first light flavours after winter. We prepare asparagus in various ways – in traditional frittatas with homemade eggs, in delicate soups that highlight their natural sweetness, or paired with handmade pasta such as fuži, pljukanci, and gnocchi.
Our pasta is not industrial – it is made in our kitchen, by hand, slowly and with care. Every piece has its own texture and character, because we believe the difference in taste lies in the details.
Summer brings an abundance of vegetables, tomatoes, zucchini, and fresh herbs. The kitchen becomes lighter, fresher, and more vibrant. The flavours are simple yet intense – allowing the true nature of each ingredient to stand out without unnecessary additions.
Autumn is a time of richness and depth of flavour. Meat dishes, slower preparation, and more intense flavours take center stage. Winter brings warmth, long cooking processes, and dishes that comfort – those prepared over hours, creating a true sense of home.
Meat prepared with respect and patience
Meat holds a special place in our kitchen…
Meat holds a special place in our kitchen, and we approach it with great respect.
We use locally sourced veal from Lika, known for its quality, natural diet, and texture. Each cut is prepared in a way that best highlights its character – whether slow-cooked under the peka, prepared on a spit, or grilled over an open flame.
We do not believe in fast cooking when it comes to meat. We believe in time, patience, and controlled temperature.
One of our most distinctive dishes is beef cheek – a dish that requires time, attention, and experience. It is prepared for up to 14 hours, slowly and at a low temperature, to achieve perfect tenderness and depth of flavour that cannot be rushed. The result is a dish that falls apart under the fork and leaves a long, rich taste that lingers in memory.
Homemade, handcrafted and authentic
A selection of the finest prosciutto and cheeses from local producers
On our table, you will always find homemade prosciutto, hand-sliced thinly and carefully to preserve its texture and aroma.
Alongside it, we offer a selection of cheeses – sheep’s, cow’s, and fresh curd – sourced from trusted local producers. Each cheese has its own story, its own terrain, and its own microclimate that shapes it.
A special place is also held by Vitello tonnato – a dish that has become one of our signature offerings. It is an example of how we interpret classic dishes in our own way: precise, balanced, and focused on the quality of ingredients.
Desserts that follow the seasons
Our desserts are not fixed – they change throughout the year
Our desserts are not fixed – they change throughout the year, just like the nature that inspires them.
In spring and early summer, strawberries, cherries, and the first blueberries take center stage. Summer is dominated by light, fruit-based desserts that refresh without being heavy.
Autumn brings plums, apples, and pears, along with warmer, more aromatic desserts. Our homemade strudels, especially apple strudel, have become a recognizable part of our kitchen – simple, yet perfectly balanced.
In winter, we turn to richer flavours, creams, and warm desserts that create a sense of comfort and home.
For every guest, without exception
In our kitchen, we think of every guest.
hat is why we always offer vegetarian, vegan, and gluten-free options – never as a compromise. Every dish, regardless of dietary preference, is prepared with the same care, respect, and level of creativity as all other dishes on the menu.
We believe that limitations should not mean less flavour – but a different, thoughtful approach.
